Bacon & Bow Tie Pasta Salad

00Ingredients
12 oz farfalle pasta
1/4 cup extra virgin olive oil
1/3 cup red wine vinegar
1/4 cup mayonnaise
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp salt
6 slices bacon, cooked and chopped
1 pint cherry tomatoes, halved
2 Tbs sun-dried tomatoes, chopped
1 Tbs fresh parsley, finely chopped
1 avocado, thinly sliced
1/2 cup fresh arugula
Directions
- Prepare the pasta according to package directions.
- Drain, and rinse cooked pasta.
- Transfer to a mixing bowl.
- Add oil. Toss to coat.
- In a jar, combine vinegar, mayonnaise, Italian seasoning, garlic powder and salt.
- Shake to combine.
- Pour over the pasta. Toss to combine.
- Gently fold in the bacon, cherry tomatoes, sun-dried tomatoes and parsley.
- Let chill for 2 to 3 hours.
- Before serving, add sliced avocado.
- Top with fresh arugula.
